Paleo Biscuits



Paleo, gluten free, dairy free and nut free


Nuts are such a healthful food, however my body just does not seem to like them. This can make finding a good paleo bread recipe very difficult!


I searched and experimented with many different recipes until I finally constructed this yummy biscuit recipe.


These are so tasty and don't fall apart like most other gluten free breads. I do recommend eating them in the first day or two however because they dry out quickly.


Ingredients:


1/2 cup cassava flour

1/4 cup TigerNut flour (not actually a nut, rather it is an underground root vegetable)

1/4 cup coconut flour

2 tbsp tapioca starch

2 tsp baking powder

1 heaping tsp salt

3 tbsp coconut milk

1/4 cup coconut oil (plus extra for greasing muffin tins)

4 eggs


Directions:


Preheat oven to 375 degrees Fahrenheit

Mix all ingredients together in a large bowl

Grease 6 muffin tins with coconut oil

Pour batter into muffin tins

Bake for about 20 minutes or until muffins are lightly golden brown on top - keep a close eye on them toward the end, they are not that amazing if over cooked
