These are my favorite snacks! I love to use white sweet potatoes, they are more similar to regular potatoes in regards to taste, but you can use whichever kind of sweet potato you prefer.
1 medium sweet potato
2 Tbsp. melted coconut oil (or you could use animal fat such as lard, tallow or bacon fat)
Sea salt (and other seasonings if you desire. I enjoy garlic powder or garlic salt)
Preheat the oven to 400 degrees fahrenheit.
Thinly slice up the sweet potato
Toss the sweet potatoes in coconut oil until thoroughly coated.
Spread out the sweet potatoes evenly in a single layer on a baking sheet.
Bake for about 15 minutes and then remove and flip over the chips. Place back in the oven for another 5 to 10 minutes, until golden brown and crispy.
Remove and salt to taste.
Let cool slightly and enjoy! Or cover and store in the fridge for a few days.
