AIP Dinner Rolls

The best AIP, Paleo, GF, Dairy Free rolls imaginable. These really are super yummy!


  • 1 1/2 cup chopped green plantain (about 1 medium)

  • 1/4 cup extra virgin olive oil

  • 1/2 tsp salt

  • 1/3 cup coconut milk (or substitute with 1/4 cup water and an additional tablespoon evoo)

  • 1 cup cassava flour


  1. Preheat oven to 425

  2. Combine the plantain, evoo, salt and coconut milk in a blender. Blend until completely smooth.

  3. Remove the contents of the blender into a medium to large bowl and mix in the cassava flour until it has formed a sticky dough.

  4. Divide the dough into 6 equal sections and then round each section into a ball and place on a baking sheet.

  5. Use a knife to form an X into the top of each if desired.

  6. Bake for 25 minutes.

  7. Remove from the oven and let cool for 5 minutes. Best when consumed within the same day they are made.
